How to Make Fried Chicken Wings

(Canh Ga Chien/Canh Ga Lan Bot Chien)

Ingredients:

  • 25 chicken wings (frozen)
  • 4 tablespoon flour (self-rising)
  • 1 egg
  • cooking oil
  • salt 
  • ¼ cup vinegar
  • onion (cut into 4 to 5 pieces)

Directions:

Step 1: Clean Chicken Wings

  1. Soak chicken wings in the mixture of warm water, vinegar and salt for 15 minutes.
  2. Drain and rewash chicken wings.

Step 2: Marinate Chicken Wings

  1. Add flour and egg into chicken wings and mix them well.

Step 3: Let Chicken Wings Rest

  1. Set them aside for 15 minutes and then mix them again.
  2. Put them aside for another 1 to 2 hours or store in the refrigerator overnight.  

Step 4: Fry Chicken Wings

  1. Add cooking oil into a saucepan or frying pot and then bring them to hot.
  2. Add cut-onion and fry.  When the onions turn light golden yellow, remove them from the oil.
  3. Add marinated chicken wings (don’t forget to mix them well before adding to the cooking oil.)
  4. Fry… continue frying until chicken wings turn light yellow, remove them from cooking oil and place on the rack.
  5. Wait until the wings cool down, re-fry them in the high heat.  

My Cooking Tips and Notes:

  • If you want chicken wings to have a thicker coat, add more flour.  Otherwise, add less flour.
  • You can divide chicken wings into 2 portions, 1 thick coat, 1 thin coat.
  • Don’t forget to stir well when frying to make the wing cook and have a nice and an even color.
  • Keeping marinated chicken wings in the refrigerator overnight tasted much better than not to.
  • It’s okay to keep marinated chicken wings in the refrigerator for a couple days.
  • For the mixture of water, salt and vinegar to soak the chicken wings, it’s okay when the taste is kind of a little sour and salty.
  • In the video, I used Tyson Chicken Wings (100% All Natural, frozen), Gold Metal Self-Rising Flour, LouAnn Cooking Peanut Oil, Morton Table Salt, Heinz Vinegar and sink water.
