How to make peanut candy / peanut brittle.

Vietnamese Peanut Candy

Ingredients:

  • peanut (bake 10 minutes at 300 – 325 degree oven after 15 minutes pre-heat)
  • white sugar
  • vinegar
  • water
  • rice paper
  • aluminium foil

Directions:

a pan = sugar + water + vinegar = Mix = COOK at high heat; when it become caramelized, add peanuts = Mix…

Now, using a large spoon transferring mixed caramelized peanuts into a rice paper.  Don’t forget spread the mixture evenly around the rice paper.  This step you need to act quickly before the mixture is firmed.  Then spray some cooking oil on a piece of aluminium foil, place on top of the peanut and use a cake roller to roll around to make the peanut evenly.

Peanut Butter Candy (Peanut Brittle)

Ingredients:

  • peanut (bake 10 minutes at 300 – 325 degree oven after 15 minutes pre-heat)
    sugar
  • white sugar
  • vinegar
  • water
  • butter
  • baking soda

Directions:

a pan = sugar + water + vinegar = Mix = COOK at high heat; when it become caramelized, turn off the heat; add butter; add baking soda; add peanuts = Mix well.

Again, this step is almost the same as the final step of making Vietnamese peanut candy/cracker above; however, instead of using rice paper, just pour the mixture into a tray and spread them around to shape of you want; you can make it circle or square or rectangle.  Then use the cake roller making the cracker evenly; you don’t need an aluminium foil with cooking oil like making Vietnamese peanut cracker because there is butter in the mixture ready.

Finally, after these two peanut cracker/candy is cooled down, just break them into small pieces and store them in jars.
